Weekly Recipe

Lunch time.  I'm always looking for new takes on the same old stuff.  Take sandwiches for example, I'm ALWAYS trying to come up with new idea's... I mean, you can only eat so many PB&J's, right?! 

I adapted this recipe from Real Simple magazine to create my own yummy lunchtime fare.  Whether you try Real Simple's recipe, mine or your own variation... I'm sure you won't be disappointed.  (my kids even loved it)

The Clipstress' restaurant inspired lunch at home:
2 slices sourdough bread (lightly toasted)
Goat Cheese (1 tbsp or more if you like)
Deli Style Mustard (to your liking, I used 1 tbsp)
fresh spinach
meat of your choice, ham would be great but I used Dry Salami

Lightly toast bread.  On one slice of bread pile on the goat cheese, on the other slice of bread add the mustard.  Layer on the meat of your choice and top with fresh spinach.  So yummy and super easy!  This would also make a great panini too.

Harris Teeter Super Doubles Confirmed

Harris Teeter Super Double coupons have been confirmed for 11/3 through 11/9.

Unsure what Super Doubles are?  It's when HT will double coupons with a face value of $1.00 to $1.99.  So all those $1q's are now worth $2.  $1.50 q's are now worth $3.  As always, their normal coupon policy is still in effect (HT limits the amount of coupons to 20 per VIC card per DAY and always doubles coupons with a face value of $0.99 or less).  To get their full coupon policy please click here .

Target 10/24 - 10/31

Before I post some of the grocery deals I'll be getting this week, I just want to take a moment to share my super-awesome-deal of the year!  I was in need of a full size set of sheets for my 4 year old son.  I happened to stumble across a clearance rack of kids bedding - on this rack happened to be one full-size set of Disney Cars sheets.  Stoked, I grabbed it to see what the mark down price was... friends, you won't believe what I got a Disney Cars full-size sheet set for.... $1.81!  That's right!  For less than $2 I got a new sheet set for my 4 year old!  Thanks for letting me share- I knew that my readers would appreciate this!

Weekly Recipe

This family favorite was passed down from my Aunt.  It truly is a delicious dish that takes mere minutes to prepare.  If you don't want to cook in the crock pot you can simmer on the stove instead.  We serve this soup with crusty bread and a salad.  It's a delicious, easy meal that will definitely have you coming back for seconds!

Tortellini Soup

4 cans chicken broth
1 jar marinara sauce
1 cup grated Parmesan cheese (the green can)
½ bag fresh spinach
3-4 cloves fresh garlic (or to your liking)
fresh cracked black pepper
1 cup dry cheese tortellini

In a crock-pot combine broth, marinara sauce, Parmesan cheese, spinach, garlic and pepper. Turn crock-pot on low and simmer for approximately 3 hours (or until hot). Add the tortellini 30 minutes before you’re ready to eat. Sprinkle with additional Parmesan cheese & enjoy!

Weekly Recipe

With the holidays approaching, I thought it would be nice to share a breakfast dish that can feed a crowd.  This recipe can be made the night before.  Not only is it filling but it's good.  Enjoy!

Breakfast Casserole

24oz  frozen potatoes (I like potatoes O'Brien)
1 tube breakfast sausage
2 tbsp butter/margarine
1 onion,chopped
2 tsp season salt
1 cup cheddar cheese (reserve ¼ cup to sprinkle on top)
12 eggs lightly beaten
pepper to taste

Thaw potatoes. Melt butter in a skillet.  Stir in potatoes, onion and spices- cook until browned.

In another skillet brown sausage & drain fat.

Grease oblong baking dish.  Place potato/onion mixture in bottom of dish then add cooked sausage (crumbled).  Sprinkle 3/4 cup of cheese then add eggs.  Sprinkle last ¼ cup of cheese on top.

Bake at 350 for 30 minutes uncovered

      Weekly Recipe

      Oven Fried Chicken
      (great recipe to use those $0.99/lb chicken thighs!)

      3 lbs. chicken thighs
      1/4 cup shortening
      1/4 cup butter (or margarine)
      1/2 all purpose flour
      1 tsp. season salt
      1 tsp. paprika
      black pepper to taste
      cayenne pepper (we like to add just a dash to spice it up a bit)

      Heat oven to 425 degrees.  Wash chicken & pat dry.  In oven, melt shortening and butter in your baking dish.  In separate bowl mix flour, season salt, paprika, pepper (and cayenne).  Thoroughly coat chicken thighs in the flour mixture.  Once shortening/butter is melted, remove dish from oven and place the coated chicken thighs skin side down in shortening/butter mixture.  Cook uncovered 30 minutes.  Turn chicken and cook for 20 minutes (until thickest pieces are fork tender).


      Chicken & Noodles

      list #1-
      6 chicken thighs
      2 carrots, cleaned and chopped
      2 stalks celery, cleaned and chopped
      1 white onion, chopped
      6 cups water (enough to cover the chicken & veggies)
      2 tbsp season salt
      1 tbsp oregano (dried)
      1 tbsp basil (dried)
      1 tbsp sage (dried)
      ---------------------------------------

      2 carrots, cleaned and chopped
      2 stalks celery, cleaned and chopped
      1 white onion, chopped
      1 pkg egg noodles (I prefer No Yolks)
      remaining broth
      cooked chicken

      In a large pot add all ingredients from list #1 and bring to a boil.  Once boiling reduce heat and simmer 2-3 hours (until chicken is tender and falling off the bone).  Once done, allow to cool (you want it cool enough to handle) about 30 minutes.  Strain liquid and reserve (this is your broth).  Remove the chicken meat from the bone (it will just fall off) and discard all bones, celery, onions and carrots.

      In same pot add cooked chicken, fresh celery, fresh carrots and fresh onion.  Add the broth you just made.  Bring pot to a boil.  Allow to boil for approximately 45 minutes (until veggies are fork tender).  When veggies are cooked to your liking, add the noodles and cook for another 5-6 minutes.  DO NOT OVERCOOK the noodles or they will become mush.  Ladle into bowls and enjoy!  (the chicken & noodles will be VERY hot and the noodles will continue to cook so this is why I don't continue cooking the noodles for the entire 12 minutes that the package calls for).

      Target 10/3 - 10/9

      I'm not overly impressed by Target's deals this week but there is one item that is a great buy.  One of their "weekly wow" deals is on Rubbermaid Lock-It's 20 piece food storage system, on sale for $12.  There was a coupon in Sunday's paper for $1 off Rubbermaid products.  So you can use this coupon and get the 20 piece set for $11.

      I will be the first to admit if I goofed- well folks, I goofed!  Target's ad was not very promising this week, I went into the store last night and they have grocery deals galore.  Waaaay too many to list.  They have so many specials going on where they are giving you a $5 Target gift card.  So please accept my apologies and go check it out!
