Weekly Recipe

I'm taking a break from grocery shopping this week, with the exception of a few fresh fruits & veggies, I'm living off my stock-pile this week!  So I thought why not just do a recipes post?  Here are some great recipes that I thought I'd share.  Happy cooking!  

This first one is a WW meal.  I'm a scampi fan, but with all the butter/oil used you can really pile on the calories.  Here is the WW version and it's surprisingly tasty!

Shrimp Scampi (4 points per serving)

Makes 4 servings
(8-10 shrimp w/ 3 tbsp sauce)
164 calories, 6 g fat, 3 g carbs, 24 g protein

4 tsp olive oil
1 ¼ lb medium shrimp, peeled & tails left on
6-8 garlic cloves, minced
1 cup chicken broth
¼ fresh lemon juice
¼ cup finely chopped parsley
¼ tsp salt
¼ tsp black pepper
4 lemon slices

In large skillet heat oil & sauté shrimp until pink (2-3 minutes). Add the garlic & cook stirring constantly, about 30 seconds. With a slotted spoon, transfer shrimp to a platter & keep warm.

In the skillet, combine broth, lemon juice, parsley, salt and pepper; bring to a boil. Boil, uncovered, until the sauce is reduced by half; spoon over shrimp. Serve, garnished with lemon wedges.

I know that artichokes aren't really in season right now, but if you get a chance to try this recipe... it is delicious.  The aioli sauce is a great dip for fish, squash, asparagus... and other veggies.
Grilled Artichokes with Aioli Sauce

3 medium sized artichokes
½ stick butter
2 tbsp garlic salt
¼ cup sesame oil
¼ cup olive oil
3 tbsp honey
2 tbsp lemon juice
2 tbsp season salt (or cayenne pepper)
1 cup mayonnaise
¼ cup Worcestershire Sauce


Cut off artichoke thorns & artichoke stem. Rinse artichoke with water; be sure to get down inside the leaves. Cut artichokes in half (vertical cut). Place artichokes in a deep pot; fill pot up with about 2 inches of water. Cover and bring to a boil. Let boil approximately 25 minutes and then remove from heat and allow to cool 15 minutes.

In a small saucepan melt butter and add garlic salt. Brush artichokes with garlic butter and grill approximately 5 minutes. Serve with Aioli dipping sauce.

Aioli Sauce (can be made ahead of time)
In a large bowl whisk together sesame oil, olive oil, honey, lemon juice, season salt (or cayenne pepper), Worcestershire sauce and mayonnaise. Refrigerate for 30 minutes.
*Aioli sauce goes great with all varieties of grilled vegetables (squash, mushrooms, peppers, etc.)

Did you stock up on pork or chicken at Lowes Foods last week?  If so, try serving it with this mustard sauce.
Mustard Sauce

1 cup sour cream
1 ½ tsp grated horseradish
1 tsp Dijon mustard
1 tsp tarragon vinegar
1 clove garlic, minced
salt & pepper

Combine all ingredients, mix and season with salt & pepper. Makes approximately 1 ¼ cups.

Weekly Recipe

Salsa Chicken

Let me start this weeks recipe suggestion with TWO disclaimers!  Disclaimer #1, this is not my recipe, I got it off of a moms group that I belong to and Disclaimer #2, I'm cooking it right now but haven't actually tried it yet!  If it turns out to be a bust, I promise to update this post.  If it's good, then I'll let you know!

3-4 boneless, skinless chicken breasts (frozen is fine)
1 can corn, drained
1 can black beans, rinsed & drained
1 jar of your favorite flavored salsa
1 block of cream cheese

Add chicken, corn, salsa and black beans to crock pot and turn on high.  Depending on crock pot temp, cook 4-6 hours.  Add cream cheese last 45 minutes of cooking.  Chicken will easily shred.  You can then serve it over rice, or in a corn/flour tortilla.  We are having ours in flour tortilla's and I'll add some shredded cheese, guacamole and jalapeno's on the side.  Little shredded chicken burritos!

Weekly Recipe

This version of beef stroganoff was one of my Papa's favorite meals.  Since hamburger is on sale at Lowes Foods this week, I thought I'd pass along this super easy to make recipe!

Papa's Casserole

1 lb hamburger meat
16 oz Velveeta Cheese
2 can Cream of Mushroom soup
1 can milk
2 cans of mushrooms
8 oz sour cream (use the full fat version)
1 pkg of Grandma's egg noodles (found in the freezer section at most stores)

Cook meat & drain fat.  Add Velveeta to meat and cook until melted.  Stir in milk, soup, sour cream and mushrooms until well combined.  Set aside.

Cook noodles according to package directions.  Rinse noodles in COLD water.

Mix noodles & meat mixture together.  Pour into a greased 13x9 pan and bake uncovered for 25 minutes at 350 degrees.

Weekly Recipe

I can not take credit for this yummy recipe, my friend gave it to me and I am planning on trying it out tomorrow.  But for those who love using a crock pot and love pasta then this one is for you!

Crock pot Lasagna
1 pound ground beef
1/2 pound of your favorite sausage
2 tablespoons cooking oil or olive oil
1 tsp Italian seasoning
2 jars (25-28oz) of your favorite spaghetti sauce
8-12 lasagna noodles cooked “al dente” (rinse with cold water for handling)
1 box sliced fresh mushrooms
2 eggs
1 15 oz carton ricotta cheese
3 cups shredded mozzarella cheese
½ cup shredded parmesan cheese

Sauté mushrooms in cooking oil (optional, add ½ cup red wine to sauté). Add sausage, ground beef, and Italian seasoning to sautéed mushrooms and brown all. Drain if necessary.

In separate bowl, mix 2 cups mozzarella, ricotta, parmesan, and eggs.
Place one ladle of spaghetti sauce in bottom of lightly greased Crockpot.
Add one layer of noodles, followed by a layer of the meat mixture, sauce, and the cheese mixture. Repeat.
Top with remaining 1 cup of mozzarella cheese.
Cover, cook on high 1 hour.
Reduce heat and cook on low 4 hrs.

Happy New Year!

Wow, I can't believe that 2011 is here!  And what a great way to bring in the New Year...
