Weekly Recipe

Hearty Chicken & Noodle Casserole

This entire week I've dubbed "cooking from my stock pile" week.  Monday night I was short on time and really only had 20 minutes to make dinner.  I opened the pantry and saw this recipe for a chicken & noodle casserole from Campbell's.  I had everything on hand from the stock pile I've created.  It was a hit- the kids ate every last bite.  The frozen veggie I chose was broccoli and I added a salad.  Perfect meal in under 20 minutes!

Get to Harris Teeter TODAY!

Just wanted to share this with all my fellow Apex folks... the HT on 55/Peakway is re-doing the entire store.  They have bins and bins of clearance priced items.  They will be doing this through 9/30 so be sure to check in daily for some great deals.  A few items I picked up this morning included Huggies baby wipes (300+ count), Hefty trash bags, Tide laundry detergent, Kashi cereal, Nivea body wash and tons more for just $9 OOP!!!  They had diapers as well as large packs of Beechnut baby food (like a 16 pk)... I have coupons for the Beechnut if you need it.

Target 9/26 - 10/2

There are a few great deals at Target this week in terms of grocery items.  KRAFT cheese (shreds or chunks), Grade A Eggs and Coke 12pk products.

  • Grade A Eggs are $1/dozen
  • 12 pk Coke products are $2.50 each (this is a steal- HT has them BOGO this week, you will end up paying $0.50 more if you get the HT deal)
  • KRAFT cheese (shreds or chunks) are $2 each, use the coupons below to get 5/$3 ($0.60 each) 
    • use (2) $1/2 KRAFT cheese Q's found in today's paper (9/26 SS) and use the $5/5 Q found here .

I'm on vacation

Weekly Recipe

Spanish Rice
2 tbsp vegetable oil
1 cup uncooked white rice
1 onion, chopped
1 1/2 cups water
1 10 oz can diced tomato & green chili (Rotel)
1 tsp taco season mix (the packets that you use to season meat)

In a large skillet (with lid) saute oil, rice and onions until the onions are brown & tender.  (about 7-8 minutes)
To rice & onion mixture add all remaining ingredients (including the juice from the Rotel can).  Mix well so that all items are incorporated together.  Cover pan and simmer for 30 minutes.  Make sure you check on the rice every now & then to make sure it's not burning.

You can serve this as a side dish with tacos, burritos or just about anything else.

This is a fast & tasty side dish that was made with items from my stockpile.  This entire dish cost me LESS than $0.25!  All items were things I got FREE from couponing!

... and a clipstress was born!

Welcome to my blog, The Coupon Clipstress!  What (or rather who) is a Coupon Clipstress you may ask?  My name is Danielle.  I'm just a typical SAHM who loves a great bargain and is constantly looking for ways to stretch our family dollar. I hate paying full price for things like groceries, diapers, toiletries and other household items so about 18 months ago I started couponing.

The goal I have for this blog is simple- I want you to be able to save money on your monthly grocery/household expenses too.  Couponing is great because you can get as involved (or not) as you'd like.  Maybe you're just looking to save $20-$30/month.  Maybe you're looking to cut your grocery bill in half.  Maybe you're looking at items to stock up on to keep your pantry full.  Whatever your goal- I'm here to help make it happen!

I mainly shop Harris Teeter and Lowes Foods (occasionally Target).  Each week I'll post my "Top 5 Can't Pass Up" deals so you, too, can start saving!

In addition to savings, I'll include a weekly recipe that can be made with items you have on hand in your stock pile. No more running to the grocery store for last minute meals or side dishes!
