Happy Holidays from the Coupon Clipstress

I'd like to take a moment to wish everyone a very happy holiday season.  This is a busy time in my house with birthday's, Christmas, New Years, visitors, holiday travel, parties and just the season in general.  I will be taking the rest of the year off.  I hope that each of you have a very happy & healthy New Year!  Can't wait to see what deals 2011 brings us!  Cheers!!! 

Weekly Recipe

With the cooler weather who can resist comfort food?  Here's a recipe for a family favorite meatloaf recipe. 

2 ½ lb. ground beef & pork (mixed to total 2 ½ lbs of meat)

1 sleeve crushed saltine crackers

3 eggs

1 green bell pepper finely chopped

2 small onions finely chopped

4 oz tomato sauce (½ of an 8 oz can)

seasoning salt (to taste)

pepper (to taste)

1 tbsp parsley

1 tbsp oregano

In a large bowl combine all ingredients, adding seasoning as desired. Once all ingredients are combined, mold the meat mixture into a loaf. Line a 9x13 casserole pan with foil and place the molded loaf in the lined pan. Cover and bake in a 350 degree oven for 30 minutes. Remove cover and continue baking for 60 minutes.
