Weekly Recipe

Since Thanksgiving is next week and because sweet potatoes are on sale for such a great price at Lowes Foods this week.  I thought I'd share one of our Thanksgiving family favorites.  

Sweet Potato Casserole

Casserole

3 cups mashed, cooked sweet potato

1 cup sugar

2/3 stick butter

2 eggs

½ tsp salt

½ cup milk

1 tsp vanilla extract

Topping

1/3 cup melted butter

1/2 cup flour

1/2 cup brown sugar

1 cup chopped pecans

In a large bowl combine all casserole ingredients and mix well by hand. (the butter will melt if the potatoes are warm) Pour casserole mixture into a 13x9 (greased) baking dish. For the topping: in a separate bowl combine the butter & flour and fluff together with a fork. Stir in the brown sugar and pecans until the mixture becomes “crumbly.” Crumble topping over potatoes and bake uncovered in a 350 degree oven for 45 minutes.

Do you ever read a couponing blog or website and wonder why you seem to be the only one missing "that" coupon?  You don't have to wonder anymore.  This is the coupon database I use.  This link allows you to check to see IF a coupon for a particular items exists, WHICH insert a coupon came from and WHEN they expire!  There is a short cut to this coupon database listed under the "more great money saving tips" header on the right-hand side of this page.  Happy shopping!

Weekly Recipe

Since it's "baking season" I thought I'd share one of my husband's favorites.  I believe they're called "Buckeyes" but since this is a Michigan house, we just stick with "peanut butter balls".  Enjoy!

Peanut Butter Balls

2 sticks butter or margarine, softened

1 lb peanut butter

1 ½ lb powdered sugar

1 ½ tbsp vanilla extract

1 pkg. chocolate chips

½ block paraffin wax

In a large bowl, cream peanut butter and butter/margarine together. Slowly beat in the powdered sugar and vanilla, mix well. Shape dough into small balls and set aside. In a double boiler combine chocolate chips and paraffin wax and melt together. Using a toothpick dip peanut butter balls into chocolate mixture. Lay out on wax paper and let cool. Refrigerate.
